2 Medium ripe bananas, mashed with a fork
10g Dates, pitted and chopped
Boiled water
1 tsp Vegetable oil
½ tsp Vanilla extract
20g SR flour
20g Oats
¼ tsp Baking powder
50g Crème fraîche
Cinnamon to taste
Begin by soaking the dates in a bowl filled with boiled water, letting them sit for about 5 minutes. Drain the water afterwards.
Next, transfer the soaked dates into a food processor, and blend them with oil until smooth.
In a separate large bowl, combine the mashed banana with the date mixture. Then, add in the vanilla extract, flour, oats, and baking powder. Stir well until you achieve a thick batter consistency.
Preheat your oven to 180°C. Grease a loaf tin and pour the batter into it.
Bake the mixture in the preheated oven for approximately 20-30 minutes, or until a toothpick inserted into the center comes out clean.
While the loaf is baking, prepare the cinnamon crème fraîche by mixing together the crème fraîche and cinnamon in a small bowl.
Once the loaf is baked through, allow it to cool for a bit. Then, slice it into serving portions.
Serve the slices of the loaf alongside dollops of the cinnamon crème fraîche.
