Cranberry and Orange pancakes

Add a pop of festive flavour to your mornings with these cranberry and orange pancakes! The zesty orange pairs perfectly with the sweet-tart cranberries to create a breakfast that feels like a special treat. Light, fluffy, and packed with seasonal goodness, these pancakes are sure to become a family favourite!

Ingredients:

267g self-raising flour
400ml oat milk
1 teaspoon vanilla extract
65ml oil
1 tablespoon baking powder
400g cranberries
Zest of one orange
1 tablespoon ground cinnamon

Directions:

  1. Defrost the cranberries if using frozen
  2. Combine flour, baking powder, milk and vanilla extract with the oil to create a smooth batter.
  3. Stir in the cranberries, cinnamon, and zest of one orange.
  4. Heat a frying pan and cook off the pancakes.
