Bubble and Squeak is a real classic dish and a perfect winter warmer. For a twist we’ve swapped in kale for the traditional cabbage and served with cheese and cherry tomatoes. Delicious!
320g potato, boiled, mashed and cooled
25g leeks, shredded
1 small white onions, thinly sliced
5g kale, shredded
Garlic powder
paprika
100g cherry tomatoes
65g grated cheese
Rosemary and garlic to taste
Olive oil for baking
Saute together onions, leeks and kale for 4-5 minutes.
Combine with potato then add paprika and garlic powder to taste. Mix through and place in a lined tray, and bake.
At the same time, roast the tomatoes with a little oil, garlic and herbs of your choice until soft. Add cheese and melt for 5-10 minutes.
Serve tomatoes with bubble and squeak.
