Mexican bean soup with warm tortillas

A delicious winter-warming soup flavoured with garlic, cumin and smoked paprika and packed with satisfying mixed beans and fibre-rich wholemeal tortillas.

Ingredients:

160g mixed beans
1 small red onion
100ml tomato passata
1 clove garlic garlic
Cumin to taste
Smoked paprika
Mild chilli powder to taste
65g sour cream
Small bunch of fresh coriander
Wholemeal tortillas, cut into strips

Directions:

Saute onions and garlic with paprika, chilli powder and cumin for 5 minutes.

Add beans and passata and bring to a gentle simmer.

Stir through the coriander and divide in serving dishes.

Warm tortillas in the oven for 5 minutes and serve sour cream and tortillas separately.
