Red cabbage, cauliflower and coconut dhal with warm flatbreads

This delicious dhal is a cosy, wholesome dish that’s perfect for family dinners. Served with warm, soft flatbreads, it’s a fun and interactive way for the whole family to enjoy a healthy and hearty dinner together. Ingredients:

1 medium cauliflower

400g red lentils

½ red onion

70g passata

270ml water

1 tsp garam masala powder

1 tsp paprika powder

1 tsp garlic powder

1 medium red cabbage

20ml coconut milk

4 baked flatbreads (or a gluten-free alternative)

Directions:

  1. In a pan, add some oil and sauté together the onions, cauliflower, cabbage, garlic and spices for 5 to 10 minutes. 
  2. Once softened, add lentils, water and passata and cook until the lentils are cooked. 
  3. Add the coconut milk and simmer for 5 minutes.
  4. Warm the flatbreads in the oven and cut into strips. Serve dishes separately and enjoy!
