Roasted red pepper hummus with avocado on toast

Looking for a fresh twist on your usual avocado toast? This recipe is a perfect blend of flavours and is a delicious, nutritious snack or light meal that’s sure to become a family favourite. Perfect for breakfast, lunch, or a snack—this vibrant toast is as beautiful as it is tasty!

Ingredients:

1 tsp garlic powder

1 tsp ground cumin

1 tbsp olive oil

1 red pepper

½ lemon

¼ tin chickpeas in water

Small bunch of coriander leaves

 

1 avocado

4 slices of wholemeal bread (or a gluten-free alternative)

Directions:

  1. Drain the tin of chickpeas out and add ¼ of the tin to the blender.
  2. Add all the ingredients to the blender, apart from the avocado and bread. Process until you achieve a thick, smooth consistency.
  3. Toast the bread
  4. Carefully cut open the avocado, removing the stone. Scoop out the avocado and mash in a bowl with a fork. 
  5. Place the mashed avocado on top of the toast and top with hummus. Enjoy!
