Poke bowl recipe

Our Salmon poke bowl is a fun and flavourful way for your child to try something new! With tender salmon, creamy avocado, and soft rice, this bowl lets them enjoy each ingredient at their own pace. Poke bowls are a fantastic way to introduce healthy foods while encouraging adventurous eating.

Ingredients:

4 salmon fillets – fresh or fresh (defrost thoroughly)
1 garlic clove – peeled and crushed
1/2 onion – peeled and finely diced
1 avocado – peeled and sliced
1 tsp turmeric
40g carrots – peeled and chopped
400g white rice
Punnet of plum tomatoes – diced
1 jar passata
1 cup of peas
1 cup of sweetcorn
1 tsp paprika
1/2 lemon – sliced

Directions:

  1. Saute the onions, garlic and turmeric with carrots until soft.
  2. Add the rice and stir thoroughly
  3. Add the chopped tomatoes and cover with enough water to be about an inch over where the rice is.
  4. Allow to cook and top up water if needed. Stir through peas and sweetcorn for 5 minutes towards the end of cooking.
  5. Roast the tomatoes with a little oil and paprika on a lined tray until soft. Stir into the rice once cooked and divide into bowls.
  6. Roast the salmon with a little olive oil and lemon. Once cooked, flake the salmon over the bowls of rice, and finish with some slices of avocado.
