Who’s hungry? Mealtime is sorted with this tasty veg-packed omelette. We couldn’t imagine a ‘feta’ option for when you need dinner in a dash.
4 large eggs
2 peppers, various colours, diced
1 courgette, diced
125g feta cheese
Handful of spinach leaves
Sauté diced vegetables in a hot pan for 4-5 minutes.
Crack eggs into a mixing bowl and whisk. Pour egg mixture into the pan with vegetables, stirring occasionally to cook the egg through but not scramble. Once cooked, allow to cool slightly and portion.
Sprinkle with feta cheese and spinach leaves before serving.
