There’s nothing easier and faster to make in a hurry than an omelette, so we’ve developed a recipe just for those hectic evenings. This easy-to-make omelette is ideal for breakfast, lunch, or even a light dinner, making it a versatile and wholesome choice for busy families!

Ingredients:

200g plum tomatoes

5 medium eggs

Handful of baby spinach

1 tsp oregano

Directions:

  1. In a bowl, whisk all the eggs until combined and add the oregano. Then dice the tomatoes.
  2. Add a little oil to a pan and pour in the egg mixture. Scatter over the tomatoes and spinach and leave to cook through for 2 to 3 minutes.
  3. Serve and enjoy!
