Yield
Makes 12-15 balls

Ingredients

  • 1 cup soft Medjool dates, pitted
  • 1 cup pumpkin seeds
  • 2 tbsp high-quality raw cacao powder
  • 1 tbsp coconut oil (melted)
  • 1/2 tsp vanilla extract
  • A pinch of sea salt
  • 1/2 cup rolled oats (for coating)

Directions

  • Place the pumpkin seeds in a food processor and pulse until they reach a fine crumb consistency.
  • Add the pitted dates, cacao powder, melted coconut oil, vanilla, and salt. Process until the mixture forms a sticky dough that holds together when pinched. If it’s too dry, add a teaspoon of water.
  • Roll tablespoon-sized portions of the dough between your palms to create smooth, even spheres.
  • Place your pulsed oats in a shallow bowl. Roll each ball through the oats until lightly and evenly coated.
  • Place the bites in the fridge for at least 30 minutes to firm up.
