Start the day with these toasted English muffins topped with egg and roast tomato – a simple yet satisfying meal for the whole family. 4 English muffins
2 fresh tomatoes diced
½ white onion
70g grated cheddar cheese
1 fresh garlic clove
4 large eggs
Small bunch fresh basil chopped
Cut the muffins horizontally and lightly toast them. Sauté tomato, onion, and garlic for around 5 minutes until the onions soften, then incorporate the basil.
Spread this mixture over the muffins and sprinkle with grated cheese. Bake in the oven for 5-6 minutes until the cheese melts and bubbles.
Fry the eggs in a hot pan until they are cooked to your liking. Serve two halves of the muffin topped with the fried egg.
