A firm favourite with children, these toasted muffins are topped with Omega-3 rich chia raspberry jam and cinnamon cream cheese for a naturally sweet start to the day. Serves a family of 4.
4 English muffins
Punnet of fresh or frozen raspberries
2 pears
1 tbsp chia seeds
2 tbsp cream cheese (or a dairy-free alternative)
1 tsp ground cinnamon
1. Peel and deseed the pears, then dice them into medium-sized chunks.
2. Cook the pear and raspberries in a pan until soft. Add the chia seeds and stir them through.
3. Remove the fruit from the hob and allow it to cool.
4. Combine the cream cheese and ground cinnamon in a small bowl.
5. Split the muffins in half and lightly toast them.
6. Top the muffins with the chia raspberry jam and a dollop of cinnamon cream cheese.
