This nutritious, creamy pasta is a wonderful way to introduce children to new textures and flavours. It’s simple to prepare and offers a balanced, delicious meal for the whole family.
Ingredients

400g haddock fillets (or chickpeas for a plant-based option)
300g spaghetti
1 small white onion, finely diced
150g plum tomatoes, chopped
1 large red pepper
½ teaspoon garlic powder
150g crème fraîche
A small handful of fresh basil
Directions
Prep
Roast the red pepper until soft, then deseed and skin it.
Boil the spaghetti until tender, then drain.
Finely dice your onion.
Method
Gently cook the onions, garlic powder, and chopped tomatoes in a little oil until softened.
Stir in the roasted pepper and crème fraîche. Simmer gently to combine the flavours, then add the fresh basil.
Use a food blender to blitz the sauce until smooth and inviting.
While the sauce simmers, bake the haddock fillets until cooked through, then gently flake them into bite-sized pieces.
Toss the smooth sauce with your spaghetti and add the flaked haddock on the side or in a separate dish.
