Ingredients:
200g plum tomatoes
5 medium eggs
Handful of baby spinach
1 tsp oregano
Directions:
- In a bowl, whisk all the eggs until combined and add the oregano. Then dice the tomatoes.
- Add a little oil to a pan and pour in the egg mixture. Scatter over the tomatoes and spinach and leave to cook through for 2 to 3 minutes.
- Serve and enjoy!
