Cranberry and orange pancakes

Ingredients:

267g self-raising flour

400ml oat milk

1 teaspoon vanilla extract

65ml oil

1 tablespoon baking powder

400g cranberries

Zest of one orange

1 tablespoon ground cinnamon

Directions:

Defrost the cranberries if using frozen
Combine flour, baking powder, milk and vanilla extract with the oil to create a smooth batter.
Stir in the cranberries, cinnamon, and zest of one orange.
Heat a frying pan and cook off the pancakes.

Pancakes can be made ahead of time
