Cranberry flapjack bars

Packed full of energy-inducing fruits and seeds, our cranberry flapjack bars are great for on-the-go snacks and packing as part of a weekend picnic. Encourage your children to get involved and have fun mixing the ingredients together!

Ingredients

160g rolled oats

20g sunflower seeds

20g chia seeds

10g desiccated coconut

Zest of 1 orange

40g dried cranberries

½ tsp vanilla extract

40g dried dates – chopped

1 tbsp coconut oil

Method

  • Blitz the oats in a food processor and then place in a large mixing bowl.
  • Mix in the sunflower seeds, chia seeds, desiccated coconut, dried cranberries, dates, and orange zest.
  • Stir in the orange juice, vanilla extract, and coconut oil. Add a little water if the mixture is too thick.
  • Press the mixture into a grease-proof lined tray and refrigerate for at least 1 hour – ideally 2.
  • Remove from the fridge and cut into equal-sized bars.
  • Keep in an air-tight container and consume within 5 days.
